Meat Selection

Our meats are dry-rubbed and smoked low and slow to perfection with hickory, apple, and mesquite wood

 

Pulled Pork

Whole bone in pork shoulder smoked for 14 hours over apple wood

Beef Brisket

Seasoned Angus beef smoked over a blend of mesquite and hickory wood for 12 hours

Links

Choice of chicken apple or hot links smoked for 4 hours over apple wood

Rotisserie Chicken

Whole chicken lightly smoked and seasoned with our signature spice rub

Vegetarian Loaf

Tofu, potato, garlic and onion base, seasoned and lightly smoked

Portobello Mushrooms

Marinated in olive oil, garlic, balsamic vinegar and then lightly smoked

Mixed Green Salad

Organic blend of romaine, red leaf, mache, frisee, radicchio and mizuna

Cole Slaw

 Crisp cabbage and carrots mixed with our homemade creamy dressing

Baked Beans

 Navy beans stewed with bacon, brown sugar, and chopped beef brisket

Potato Salad

Yukon Gold Potatoes, celery, and red onion tossed in our homemade dressing and garnished with sliced green scallions

Macaroni and Cheese

  Three cheese blend of sharp cheddar, mild cheddar, and monterey jack topped with toasted panko bread crumbs

Pesto Bow Tie Pasta

 Pine nut pesto with un dried tomatoes and tossed with parmigiano reggiano

Grilled Vegetable and Bread Salad

Grilled Corn, red bell pepper, squash, zucchini, red onion, avocado, and grilled sourdough bread tossed in a light balsamic vinaigrette

Corn on the Cob

 Grilled corn brushed with chipotle lime butter (Seasonal)

Fruit Salad

Seasonal mix of organic fruits

 

Beverages

Coke, Diet Coke, Sprite, Tangerine and Lemon San Pellegrino, and bottled spring water

Slightly Sweet and Tangy BBQ Sauce and Sweet and Smoky BBQ Sauce
